Visit to a centenary family winery (D.O wines from Madrid) and tasting of 3 of its wines. From the mid-nineteenth century, the Cuéllar family founded the winery in response to the demand for wine from the city of Madrid. In 1953 it was handed over to the Peral family who, in order to produce quality wine, used the ancestral wine traditions and innovated their cultivation and elaboration by applying techniques such as ”sobredress” (it means that the wine fermente with the mother. That is, with the grape destemmed and crushed).

We will then head to the charming medieval town of Chinchón , recognizable in the distance by its houses clustered together on hilltops. The beautiful medieval square is Chinchón’s most emblematic landmark. Let´s enjoy a great lunch based on its specialties of this village: roasted lamb or suckling pig, Castillian soup, delicious “monk” sweets and the typical “anis“ a traditional anise made with quality criteria. You can find it sweet, dry or special dry.

In the afternoon, (available from May to January) we will visit the last of the four old mills located in the Vega of the river Tajuña, dating from the end of the S. XVIII. The owner, Marta, will take you to visit the centennial olive grove, cradle of ecological ”cornicabra” olives. We will have a fantastic tasting of its virgin oil.

Rest of the months, we will stay more time at Chinchon, visting the Monks convent to learn about the production ot their homemade sweets and taste some of them
